VALERIE THOMAS

General Manager

Valerie Thomas is a Chicago native of the West Side.  She spent over a decade living and working in Milan, Italy in the fashion industry.  Returning to Chicago, she went to culinary school with the intention of becoming a chef.  She married one instead and discovered her calling in the Front of the House.  She found her true passion for hospitality and service as the Dining Room Manager while working with chef Charlie Trotter.  From fine dining to casual restaurants, Valerie has practiced the high standards and principles of service she learned early in her career.  As General Manager, she loves “hosting the party” and being of service to her guests, staff, and partners. Grant Park Bistro offers her the opportunity to contribute to its growth and continued success.
